My name is Mitch and I'm the sous-chef of Xue family restaurant. I am from Britain and I met Mr. Xue during a food convention in London. I've worked here since 2005, so I have a lot of experience. I am now married to Mr. Xue's sister.
My task is to assist the chef and give orders to the kitchen team. If the chef is absent, I replace him.
I find it important that everyone comes to work motivated and that they do their work with pleasure. If someone appears to be upset about something I talk with him to know what the problem is. This way everyone stays happy!
Our restaurant is a small family business. It was first founded in 1996 by our father 托马斯薛 (Tuōmǎsī Xue). Since then it has always been a family restaurant. Now it is ran by his son 乔楚薛 (Qiaochu Xue). We have other employees from Great-Britain such as Gaetan Van Acker and Mitch Naudts. We want to spread authentic Chinese Hunan cooking throughout Great-Britain.

In Chinese food there is a big variety of flavors. The five key flavors salt, sour, spicy, bitter and salty must be used in balance. You might notice that the flavors sweet and umami aren't considered key aromas. This is because the other five were the fundamental flavors in traditional Chinese medicine.We try to respect the balance of these five flavors in our dishes.
